Vegetable Pie

Summertime means fresh vegetables!  Whether they come from your backyard garden or the local farmers' market, fresh veggies are the perfect summer side dish.

This vegetable "pie" combines four of my favorites...zucchini, tomatoes, onion, & red potatoes. The great thing about this recipe...you can swap out the veggies for different ones that are abundant in your area.


 
 
1 large zucchini, thinly sliced
1 medium onion, thinly sliced
2-3 ripe tomatoes, thinly sliced
2-3 red potatoes, thinly sliced
extra virgin olive oil
sea salt
black pepper
garlic powder
 
*I used the slicing blade in my food processor to slice the zucchini, onion, & potatoes.  You could also use a mandolin. 
 
**This recipe filled two pie plates & fed our family of 6 with some left-overs to spare.  You could make this at the beginning of the week & enjoy for days.
 

Mist your pie pan with olive oil or olive oil cooking spray.
 
 
Make an overlapping layer of potatoes on the bottom of the pie plate.  Sprinkle with sea salt, pepper, & garlic powder.
 
 
Add a layer of onions & top with a layer of tomatoes.  Season with salt, pepper, & garlic.
 
 
Top with an overlapping layer of zucchini.  Season & drizzle with olive oil.
 
Bake for 40-45 minutes at 400 degrees.
 
 
I served our vegetable pie with lemon pepper chicken, but it would also be delicious with your favorite fish.

Team Poise & Purpose VIP Health & Fitness Challenge

How many times as parents, care-takers, co-workers, or friends do we put everyone else's needs before our own? We want to help everybody & make everyone happy. We want to be superheroes.
But then we feel run down, blah, and worn out.
 
It is not a bad thing to take some time for yourself each day to improve your health & fitness. As a matter of fact, if you take even just 30 minutes a day for a workout you will have more energy, more strength, & be more physically apt to deal with the other responsibilities you have throughout the day.

Make yourself your own VIP for at least 30 minutes a day & you will be able to better serve all those folks who do see you as a do-it-all superhero.
 
Everyone matters!  Each & every person deserves good health, happiness, & to feel their absolute best each & every day.

Amber Lee:
 
 
Amber is the newest member of our team & will be bringing great energy & fresh ideas to our VIP challenge.  Amber is no stranger to helping people feel fabulous - as a hair stylist she helps people look amazing.  Now she is ready to help our challengers FEEL great with daily exercise & healthy eating.
Working long hours on her feet, Amber knows what it feels like to want to just sit down & take a load off after a day of work....but she knows how to push herself for something better & she's ready to help you do the same.
 
Amy Dilatush:
 
Amy is a mom of 2 girls, ages 5 and almost 10 months. After the birth of her first daughter she lost 65 pounds using a combo of exercises, weight watchers (which she quit due to expense and complication of tracking points) and finally T25 (once my gym membership fees got out of control).
 
Amy gained around 35 pounds while pregnant with her second daughter.  She lost 25 of that so far jogging, T25 and most recently 21 Day Fix and Shakeology (which she loves)! 
 
 Amy is currently a stay at home mom but she plans to return to work soon. Amy is a clinical social worker and also has a certification in behavior analysis  -so helping people change behavior of any kind is what I do professionally. Given my lifelong struggle with weight and my professional background, I thought becoming a Beachbody coach would be a good fit for me as a side gig.
 
Laura Hennigan:
 
Laura has been skating in a counter clockwise direction on the derby track for five years.  Her internationally-ranked team, the Chicago Outfit, has made playoff appearances every year since joining the Women's Flat Track Derby Association.  Laura has played with all three Outfit teams and previously supported the team as a skater-coach.

Laura found Beachbody after taking a year off to focus on starting a family with her husband.  Since discovering fertility issues, and treating those issues, Laura has used Beachbody products to help her stay fit, focused, and healthy.  Shaun T is her spirit animal, and her favorite Shakeo combo is chocolate, banana, and peanut butter.

Laura loves Beachbody coaching because she enjoys helping people reach their wellness goals, and helping people tweek their current routine to enhance their performance.  She LOVES challenge groups--and likes a little friendly competition to keep everyone on target for their goals.
 
Lori Waters:
 
Lori is our resident runner. If she's not racing through Disney parks, she collecting medals all around the Sunshine State. Sometimes, the whole family takes part. Her daughter is often her running buddy for 5k races.

ndly recipes (like veggie loaded mac & cheese!) with her two adorable kiddos. With fall approaching, get ready for some new pumpkin creations!

Lori was initially drawn to Shakeology as a healthier and more complete alternative to homemade smoothies. She later discovered Beachbody home workouts to help her build muscle and increase endurance for runs. Using Beachbody on Demand via Roku, she's able to workout daily with any celebrity Beachbody trainer. She's currently training for a 10k/5k challenge race to celebrate her 40th birthday.

Jessica Hrbek:
 
 
 My family, my students, & my teaching career all came ahead of my own self-care for many years....and after baby number four it really showed.  Thanks to the support I received in challenge groups my energy increased, I regained my self-confidence, & dropped 40 lbs. and 20 inches.  The community of positive energy & support changed not only my physical appearance, but did a complete overhaul on my attitude & outlook on life.
 
In addition to supporting my beautiful family, now my passion is helping other moms learn how to make health, fitness, & clean eating a priority for themselves & their families.  One of my favorite things to do is get in the kitchen with my kids & whip up healthful, tasty recipes.  I love being about to pursue my new-found passion & be a positive role model for my children all at once.
 
I am the founder of Team Poise & Purpose and proprietor of FitMommaOfFour.com . I joined Team Beachbody as a coach in February 2013 after having personal success in challenge groups.  I want to share the tips & knowledge that I have learned along my journey with other moms.  I want to show you that when you make yourself a priority, even if it's for only 30 minutes a day, you will be better equipped to take on all the demands of your busy life.

Chocolate Covered Banana Slices

Looking for a sweet bite that tastes good & won't wreck your progress?  Try these little beauties.  Bananas are naturally sweet, dark chocolate has wonderful antioxidant benefits, & coconut oil & all natural peanut butter provide you with healthy fats your body needs (in moderation, of course).



Step 1: Melt 1/2 cup dark chocolate chips (80% cocoa or more is best) & 1 tsp. extra virgin coconut oil in a microwave safe bowl.  Microwave for approximately 30 seconds, stir, & microwave for approximately 30 more seconds & stir again til smooth.


Step 2: Cut 3 bananas into 1/2 inch slices.


Step 3: Dip banana slices into melted chocolate & place onto a parchment lined baking sheet.


Step 4: Put baking sheet in the freezer for approximately 10 minutes.


Step 5: Place a dab of all natural peanut butter between two chocolate covered banana slices to make a flavor filled bite of goodness.
 
*Place extras in a resalable container & place in the freezer for future craving crushing.
 
*21 Day Fixers: 6 chocolate covered banana slices with all natural peanut butter = 1 purple, 1 orange, 2 tsp.

Summer Confidence Club


6 years ago: I had 3 kids. I was exhausted. I maybe did one random yoga workout a few times a month. I was eating whatever was quick & easy, not necessarily the most nutritious. I was hiding under the longest shorts & flowiest top I could find.

Now: I have four kids. I take care of myself with 30 minutes of daily exercise (more on days I teach PiYo) & fuel my body with healthy foods so I have all the energy I need to keep up with my brood. I feel confident in whichever outf...it I put on - not because I have the "perfect body" (far from it) but because I am fit & I am the best version of ME! The confidence comes from the inside out!

You can improve your confidence at any age or stage of life, and much of the process is influenced by small daily choices.  Replace negative thoughts with positive ones.  Read books that feed your mind & soul.  Listen to podcasts that expand your thinking. Surrounding yourself with positive energy & a group of people who are working toward a common goal will make you more likely to succeed.  Daily exercise, getting plenty of rest, and fueling your body with healthy foods...all of these factors will help to increase your confidence because your mind & body will all be at their best!

We will not only focus on fueling the body, building our muscles, but also feeding our mind in this online accountability group is run via a closed group on Facebook.  You will have access to the group, the meal plans, the recipes, tips, motivation, accountability & me, your coach, 24/7.  All of the participants will be busy women, just like you, looking to implement healthy habits to gain energy, feel comfortable, confident, & lift each other up along the way.

I will help you find a home workout program that meets your needs based on your answers in the questionnaire below - whether you want to tone up, improve your range of motion, or have a daily dance party in your basement.  Then I will help you work daily exercise into your busy schedule & build confidence by celebrating your daily victories.

Sweet Potato Nachos

 
This dinner was totally outside of the "typical" box, but it was so tasty that I will definitely be making it again.
 
Ingredients:
3 sweet potatoes, sliced thin
 
1 pound lean ground turkey
 
1 can black beans, drained & rinsed
 
Cajun seasoning
 
sea salt
 
black pepper
 
extra virgin olive oil
 
ground cumin
 
Optional toppings:
shredded cheddar cheese
 
diced onions
 
hot sauce
 
peppers
 
 
plain Greek yogurt (in place of sour cream - you'll never want to go back!)
 
Directions:
 
1. Pre-heat oven to 450.
 
2. Thinly slice sweet potatoes (I used the slicing blade on my food processor & got them done lickety split) & place in an even layer on a baking sheet.  Drizzle with extra virgin olive oil, sprinkle on sea salt, black pepper, & a pinch of ground cumin.  Toss well & place in oven.  Roast for approx. 20 minutes, turning occasionally.
 
3. In a large skillet, brown ground turkey seasoned with Cajun seasoning.
 
4. When turkey is cooked through, lower the heat & add the black beans.  Cook until beans are warmed through.
 
5. Place sweet potatoes on your plate, top with meat & bean mixture & garnish away! 
 
The kids liked theirs with cheese.  I skipped the cheese & went with diced onions & hot sauce!  I will definitely be making the corn & black bean salsa to put on top next time we make this.

June & July PiYo Live Schedule

Just because the kids are off from school & schedules are out of whack doesn't mean that you cannot get your sweat on!!

June & July are busy months for our family, but I will still be offering PiYo Live classes whenever I am available. 

All classes are 1 hour, unless otherwise noted.

All classes are held at Tap Etc. - 131 E. Main Street in Front Royal, VA

Be sure to wear comfortable workout clothes to class.  Most participants prefer to take class barefoot, but you can wear sneakers or studio wraps if you prefer.  Bring water, a yoga mat, & a friend!

Hour long classes are $8 per session, 30 minute classes are $5 per session.  I accept cash, check, & credit cards

Blackberry & Chia Seed Refrigerator Jam

 
This recipe was so easy & the result was so delicious that I just had to share!

In a saucepan combine 1 pint blackberries & 1/3 cup water. Bring to a boil over medium-high heat just until berries burst & juices flow. *you may have to add additional water. Keep an eye on it & stir frequently.

Remove from heat & stir in 1 Tbls. chia seeds. Transfer to a glass container with a lid & refrigerate for at least 1 hour before eating.

Simple. Delicious. Naturally sweet.
