Turkey & Sweet Potato Soup

This recipe started out as putting a little bit of this & a handful of that into the pot & turned out to be super delicious!  All four of the kids asked for more...I'd call that kid approved!
1 1/2 lbs. lean ground turkey, browned
1 Tbls. extra virgin olive oil
1 medium onion, diced
2 cloves garlic, minced
3 large carrots, sliced thinly
2 medium sweet potatoes, sliced thinly
1/2 cup lentils
1 cup frozen spinach
1 box low sodium chicken broth
2 cups water
1 Tbls. ground cumin
a dash of ground cinnamon
a dash of ground ginger
sea salt & fresh ground black pepper to taste
1)Brown ground turkey in a large soup pot.  Remove meat from pot once it is browned.
2) Sautee onion & garlic for 1-2 mins. in extra virgin olive oil.  Add in carrots & sweet potatoes & sautee an additional 1-2 mins.
3) Add in browned ground turkey.
4) Cover with chicken broth & water. 
5) Add in lentils & spinach.  Add additional water if needed to cover all ingredients.
6) Stir in cumin, cinnamon, ginger, sea salt, & pepper.
7) Bring soup to a boil for 1-2 mins.  Stir well, cover, & lower heat.  Simmer approx. 45 minutes.

Oatmeal with Greek Yogurt and Berries

You have a jam-packed day, a to-do list a mile long, a family to take care of, & a million jobs to do....but you skipped breakfast?!?

 Fuel your body with healthy foods & you'll be more focused & energized to carpe diem!
Additionally, folks who eat breakfast are more likely to make healthier food choices throughout the day & eat fewer calories.

 This morning I prepared 1/2 cup rolled oats with 1/2 cup water - microwaved for 1 minute.
Then I stirred in 1/2 cup plain Greek yogurt, a sprinkle of cinnamon, a dab of raw honey, & a healthy deserving of fresh berries.

 For those of you doing the 21 Day Fix - this is 1 yellow, 1 red, & 1 purple.

More Energy & Better Food Choices after 3 rounds of the 21 Day Fix

I love celebrating victories with my challengers!
This awesome lady started off 2015 with a bang, deciding to improve her health & fitness in one of my online accountability groups.  Her goals were to eat healthier & stay on a regular exercise plan with consistency.  The easy-to-follow nutrition guide from the 21 Day Fix & dynamic 30 minute workouts made those goals attainable.
She also craved motivation & support to stay on track.  Thanks to the support of the challenge group she was able to continue with her program, get back on track, and see great results.
