Black Bean Dip


Quick, easy, tasty, & healthy...this dip meets all my major snack food requirements!
 
You can make this dip in a food processor or a strong blender. 
You can make it ahead of time or right at the time of  your snack-attack.
 
Black Bean Dip
 
1 can black beans, drained & rinsed
1-2 cloves fresh garlic, minced
the juice of one lemon
2 Tbls. fresh parsley or cilantro, minced (pick the one that best suits your taste)
1 tsp. sea salt
1 tsp. fresh ground black pepper
a sprinkle of red pepper flakes
2 Tbls. extra virgin olive oil
 
Pulse all ingredients except olive oil in your food processor or blender until combined. 
Then stream in the olive oil until the desired texture.  I like to leave a few chunks of black beans but you may prefer a smoother dip.


Serve with fresh veggies or whole grain crackers.

Whole wheat bread with flax & chia seeds

 
I don't eat bread every day, but when I do I prefer sprouted Ezekiel bread or homemade bread that I've made in my bread machine.  I love the bread machine because it gives me the satisfaction of fresh, home-baked bread but it does all the hard work for me.
 
This recipe is hearty & delicious! 
 
1 3/4 cup warm water
3 cups whole wheat flour
2 Tbls. coconut oil
1 Tbls. blackstrap molasses
2 Tbls. ground flax seed
2 Tbls. chia seeds
1 tsp. sea salt
1 Tbls. quick rise yeast
 
*Be sure to refer to the manufacturer's directions that accompany your bread machine on the order in which you should add the ingredients.  It varies from machine to machine.

Insanity Max 30, Week 1 Progress Report

HOLY COW!  are the first words that come to mind when I reflect on my first week of Insanity Max 30.  For a workout that I was totally petrified to even try I could not be more enamored & excited to wake up & get my workout in for the day. 

I am loving this new challenge & the great feeling that comes with pushing myself outside of my comfort zone.  This workout is no joke & I would not recommend it to anyone who does not already have a base level of fitness - so if you are a beginner let me guide you to a program that will better meet your needs & you can tackle this one down the road in your fitness journey.  I wouldn't want anyone to become injured or get discouraged because you start with something that is too intense for your abilities. 

Now by no means does that mean I'm the most fit fiddle out there - I am doing my fair share of modified moves with Max 30.  Those high impact power jumps are not friends with my knee joints, so modified city is where it's at come crazy jump time.  Speaking of the modifier, I love that they have done an awesome split screen shot on the modifier track so you always have full view of the cast member doing the modified moves.  You never have to guess how to best modify a move or lose sight of your new BFF.

So drum roll please, after only one week of Max 30 workouts I have already lost 2 lbs.!  My goal is not to lose a ton of weight, but to get back to my "ideal weight."  Over the past few months I have let my nutrition slide a bit & a few extra pounds slipped back on...Time to get those bad boys off & gear up for an amazing 2015!

We all know & love Shaun T - or at least everyone in my house loves this guy.  We have a wide range of Shaun T workouts in our workout library ranging from Shaun T's Fit Kids Club to Focus T25.  But in all honesty, I have only tried Insanity in Live classes & I've never done the Insanity home workout program.

Healthier Apple Crisp

 
Looking for a healthier dessert option?  Check out this recipe that my kids keep asking to make over & over again!
 
Filling:
10 - 12 of your favorite apples, sliced - we used Granny Smith & Gala
1/4 cup raw honey
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground ginger
 
Mix all ingredients well & spread in a baking dish.
 
Topping:
1/2 chopped pecans or walnuts
1 cup old fashioned oats
1/4 cup melted butter
1 tsp. ground cinnamon
1/4 cup raw honey
 
Mix all topping ingredients well & spread evenly on top of apple filling
Bake at 350 for 40-45 minutes until bubbly & golden brown.
Enjoy!

Curried Cauliflower


Looking to add a little flair to your Thanksgiving spread this year?  Try this flavorful spin on cauliflower.

Oven-Roasted Curried Cauliflower
 
1 head cauliflower, cut into florets
2 Tbls. extra virgin olive oil
2 Tbls. curry powder
fresh ground black pepper & sea salt to taste
 
1. Preheat oven to 400 degrees
 
2. Toss cauliflower florets, olive oil, & spices in a large bowl until the florets are lightly coated.
 
3. Spread cauliflower florets in a single layer on a cookie sheet.
 
4. Bake for 20 - 25 minutes, stirring half way through.

Holiday Survival Guide - 21 Day Fix style


Did you know that the average American gains 12 pounds between Halloween & New Years?  Shocking, I know!  I always knew that my pants felt a little more snug around the holidays & that I was doing a little more indulging than usual, but it wasn't until I had a plan for accountability in place that I was able to reverse that trend.
 
 
The thing that worked (& still works to this day) to keep me in line with healthy habits on a daily basis is a challenge group.  A challenge group provides the support & accountability that most people are lacking when they are trying to get healthy & fit. 
 
For years I tried eating healthier, joining gyms, doing workouts on my own and after a few weeks I was usually back to square one...why?  Because I had no accountability.  Nobody checking in on me & supporting me when I was struggling to make healthier choices.  Then I joined a challenge group with my friend & coach - for the first time ever I was able to stick to the workouts, stick with the clean eating plan, and stay motivated - even during tough, temptation-filled times like the holidays!
 
 
Starting on December 1 I will guide you through 3 of the toughest weeks of the year to stay healthy with tips & tricks to enjoy those holiday parties & family gatherings but with a healthy balance!  We will put healthy habits in place now so you can roll into the new year & not need a resolution.  I will provide you with meal plans & healthy recipes - even cleaning up some of your holiday favorites!
 
Everyone in the group will be following the 21 Day Fix fitness & nutrition program.  This home workout has fun, 30 minute workouts that can help you loose 5-10 lbs. in just 21 days!  Even a busy mom of 4 like me can find 30 minutes to workout during the holidays.  My workouts are seriously what keep me sane at this time of year & are a great stress reliever!

Chocolate Waffles

 
It's my lovable, kind-hearted, rambunctious third child's 6th birthday & he requested waffles for breakfast. I surprised him with chocolate waffles - I typically have a "no chocolate for breakfast" rule, but you only turn 6 once, so I went for it.  Little does he know, I cleaned up the recipe!


1 cup whole wheat flour
1 cup wheat bran
2 Tbls. wheat germ
4 tsp. baking powder
1/4 tsp. sea salt
2 Tbls. dark chocolate, unsweetened baking cocoa powder
2 eggs
1 3/4 cup milk OR unsweetened almond milk
1 Tbls. raw local honey
1/2 cup coconut oil, melted OR unsweetened applesauce

🔄Combine all ingredients in a large mixing bowl until the batter is smooth.

 ▶️Follow the manufacturer's directions on your waffle iron for the amount of batter & cooking time for each waffle.

These breakfast treats don't need any syrup, but a smear of all natural peanut butter makes them super-extra-extraordinary. 😋

Transformation Tuesday - Shout out to my girl, Judy!


Have you met my friend Judy?  Just a little over a year ago I was chatting with Judy about her goals to get into a regular exercise routine, cook healthier meals for her family, and drop a few pounds.  Judy had tried many things on her own, but needed some accountability buddies to keep her going day in & day out.  

Judy wasn't sure about joining a challenge group at first.  But I reassured her that everyone participating in the group was there for a common purpose - to improve their health & to support & motivate one another.  I told Judy that the group would be run in a closed Facebook group, so she did not have to share her trials & tribulations with the world, just the other group members & me, her coach.

Judy decided to go for it!  She liked the idea of learning about clean eating & weekly meal planning.  She was excited about the support & comradeship of the group.  Judy decided to try out Shaun T's Hip Hop Abs & Rockin' Body workouts (because who doesn't love dancing & having a good time while getting your sweat on!).  She started eating clean & replaced one meal a day with Shakeology.  There were ups & there were downs along the road, but Judy was starting to reap the benefits of her new, healthier lifestyle!  

One year & several challenge groups later Judy is continuing to exercise one a regular basis. She knows how to balance healthy eating & a little indulgence now & again.  Judy not only looks AMAZING, but she feels GREAT too!  She is setting a healthy example for her sons & rocking any outfit she chooses.  

I am over-the-moon PROUD of this sweet, caring lady.  Keep up the great work Judy!

Chicken & White Bean Soup


This soup was so good that I am psyched to eat the left-overs today!!  The entire family enjoyed it & hubby went back for seconds. 

Ingredients:
3 boneless, skinless chicken breasts
4 large carrots, peeled & cut into rounds
2 medium sweet potatoes, chopped into cubes
**2 cans of cannallini (white kidney) beans, drained & rinsed
2 cups baby spinach
1 large onion, chopped
1 - 32oz. box low-sodium chicken stock
2 tsp. ground cumin
2 Tbls. curry powder
1 clove fresh garlic, minced OR 2 tsp. garlic powder
2 tsp. black pepper
2 tsp. sea salt

**To give the soup a creamy texture put one can of the cannallini beans in the blender with a little water or chicken stock & puree until smooth. Whisk together with chicken stock.

Add all ingredients, EXCEPT the spinach, to the crock pot & cook on high for 4 hours or low for 6-8 hours.  

3-3 1/2 hours through the cooking process pull out the chicken breasts & cut into bite-sized pieces.  
I find this keeps the chicken moist & delicious.
 Return chicken to the crock pot & stir into the soup.  Add the spinach to the soup at this time as well.

Banana & Oats Trail Mix Cookies



In truth these cookies came about because my toddler peeled all the bananas left in the fruit bowl yet turned out to be a delightful treat.


My little helper already peeled the bananas so I just had to mash them up & he helped me mix up all the ingredients.

~3 ripe bananas, mashed

~1 1/2 cups old fashioned oats

~1/2 cup almond, cashew, & dried cranberry trail mix 
(I used the Archers Farm brand from Target)

~1 1/2 tsp. ground cinnamon


After mixing all the ingredients well I used my mini scooper to make perfectly portioned cookies.  You could also use a rounded tablespoon.

I placed the cookies on a cookie sheet & baked them at 350 degrees for 15 minutes.

For 12 years I worked as an elementary school teacher - helping my students each day to realize their inner awesomeness.

What is P90?

A few years back, when I was in what I call my "baby making phase," my hubby jumped on the bandwagon & took on the challenge of P90X.  I remember watching him complete the 1 - 1 1/2 hour workouts, doing push-ups, pull-ups, crazy plyometrics, grunting, sweating....and thinking, "there's no way I'd ever be able to do that!"

Tony Horton was on my flight to Las Vegas when I attended Coach Summit 2013.


Fast forward to December 2013 - I was more than a year into my new healthy lifestyle journey & ready to step up my game, but with four young children I still couldn't see myself doing the hour & a half long workouts.  Tony Horton must have heard my call & came out with P90X3 - extreme results in power-packed 30 minute workouts.

Favorite Pumpkin Recipes

The air is crisp, the leaves are just starting to change, we are taking up residence at the soccer fields....'Tis the season for pumpkin everything!  The trick is to walk right past all the "pumpkin flavored" junk the grocery store is shoving in your face & find yourself some REAL pumpkin.  If you are feeling rather adventurous you can get whole pumpkins & roast the flesh yourself...I will tackle that feat another day.  For right now I am reaching for the cans of 100% pure pumpkin puree - the ONLY ingredient is PUMPKIN!  This yummy stuff is low in calories, high in fiber, packed with vitamin A, & chocked full of antioxidants.  What's not to love?

Here are a few of my favorite uses for pumpkin!




Mix 1/2 cup old fashioned oats & 1/2 cup water in a microwave safe bowl.  
Microwave for 1 minute.
Add 1/2 scoop vanilla Shakeology or vanilla protein powder & 1/4 cup unsweetened vanilla almond milk.  Mix well.
Add 2 Tablespoons pumpkin puree, 2 Tablespoons raisins, & a sprinkle of pumpkin pie spice.  
Mix & enjoy!

Teriyaki Chicken Thighs

I typically go for chicken breasts, but there was a great deal on thighs at the grocery store so I thought I'd give them a whirl.  I knew the crock pot would be the perfect way to maximize the flavor of these thighs.  This recipe took about 10 minutes to put together (an that was mainly because I removed the skin from the chicken thighs).  The kids all cleaned their plates & my hubby loved it too.

Teriyaki Chicken Thighs in the Crock Pot
8-10 chicken thighs, remove the skin
1 - 20oz. can pineapple chunks in juice
1/2 cup liquid aminos
1/4 cup raw apple cider vinegar
2 Tbls. raw honey
2 tsp. freshly ground black pepper, divided
1 tsp. garlic powder or 1 clove garlic, pressed

Season chicken thighs with pepper & place in the bottom of the rock pot.  Pour in the pineapple chunks & juice.  Combine the remaining ingredients in a small bowl & whisk together.  Pour mixture over chicken thighs.  

Place the lid on the crock pot & cook on low for 6-8 hours or on high for 4 hours.

We served our teriyaki chicken thighs with brown rice & broccoli.  Yum!!
