Grilled Vegetables


I love the summer for so many reasons. On the top of the list this week? Grilling! Last night I sliced eggplant, zucchini, & yellow squash on an angle (to make the slices larger/ less likely to fall through the cracks on the grill). I marinated the veggies in a little extra virgin olive oil, salt, pepper, garlic powder, and sliced fresh basil. I grilled them on medium heat for a few mins. on each side. You have to stand there and watch them. Cooking time varies depending on the veggie & size of slices. 
These made a great side dish last night & the left overs made an awesome pita sandwich with a little Laughing Cow cheese for lunch today!
