Curry Brown Rice & Lentil Casserole with Chicken


Looking to try something different for dinner? Try this recipe I adapted from my mom's Under 300 Calories cookbook. We had it for dinner last night & left-overs for lunch. It was a hit!
Curry Brown Rice & Lentil Casserole with Chicken*
1 medium sweet potato, cut into small pieces
1/2 cup uncooked brown rice
3/4 cup lentils, rinsed
2 1/2 cups water
2 tsp. curry powder
1 cup cherry tomatoes, quartered
*I shredded the breast meat from a rotisserie chicken we had in the fridge & added it to the mix, but the meat could be omitted for a vegetarian-friendly dish.
Combine ingredients in a 2 quart casserole dish, cover & bake 1 hour, or until rice is tender.
