Roasted Pumpkin Seeds


If you are carving jack-o-lanterns this week for Halloween, DO NOT throw out the pumpkin guts!!!  You can roast the seeds for a crunchy, healthy snack.

* Separate the seeds from the other pumpkin guts and place in a bowl of water.

* Skim the seeds from the top of the bowl and place on a paper towel to pat dry.

 *Place the seeds on a baking sheet.

 *Drizzle with extra-virgin olive oil. Sprinkle with sea salt.

 *If you want to spice things up, sprinkle with a little chili powder and ground cumin.

 *Stir with a spatula to be sure all of the seeds are covered with the oil and seasonings.
 
*Spread seeds into a single layer on the baking sheet.

 *Bake at 300°F for about 45 minutes, stirring occasionally.

 *Allow seeds to cool completely and store in an airtight container.
